The most perfect potato salad
This past weekend I was visiting my mom. Monday morning (yes; morning) my mother asked what I wanted for dinner. Since I do most of the cooking when I’m over (strange isn’t it?) I said: well it’s kind of unbearably hot outside so what about potato salad? She agreed. I had to run to a friend’s house in the afternoon so I simply asked if she wouldn’t mind boiling eggs since she was going to be home anyway because I had to borrow her car. She simply responded she’d be glad to. My mom and I have a great collaboration. So I get back to her place right on time for an early dinner to accommodate my elderly mother’s preference… lol – Just kidding; she’s only 63; she’s hip and happening – we just got back from an amazing trip to Europe and trust me; she can keep up.
So here’s the most amazing potato salad. I just opened the fridge, got inspired and creative and thought I’d share:
You need: eggs, celery (heart is better), green onions, mayo (I prefer salad dressing (Kraft) to regular mayo (Hellmann’s), relish, soft creamy goat’s cheese.
6-8 boil eggs (depending how hungry you are),
Once boiled, let cool down and remove the yolks
Take the cooked egg whites and dice them.
Chop 1 celery stalk and 1 green onion.
In a large bowl, mix ½ cup of mayo with a 1 table spoon of relish, 1 table spoon of soft creamy goat’s cheese. Once well mixed and smooth, then add the yolks, celery and green onions and continue stirring.
Once mixed, stir in a bowl with the diced whites.
…et voilà!
